Low Calorie Banana Muffins

I use this little low calorie banana muffin recipe all the time. I got it here  but I made a few adjustments that you can add if you’re feeling naughty.

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp kosher salt
  • 1/4 cup applesauce
  • 1/4 cup sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 cup of mashed bananas (3-4)

And if you’re a non-fat-with-whip kinda gal like myself you can also add up to a cup (total) of any or all of the following:

  • chocolate chips
  • nuts
  • raisins
  • dried cranberries
  • anything else that inspires you

Preparation

Preheat oven to 175° C  (350° F) and grease the muffin tins or use paper liners.
Mix banana, sugar, egg and vanilla. Add the applesauce.
Mix flour, baking powder, baking soda and salt in a separate bowl.
Stir together the mixtures until just combined.
Add any other yumminess.
Spoon desired amount into muffin tins. (I make these small for the boy)
Bake for 15-20 minutes until an inserted toothpick comes out clean.

Let it cool before eating (unless you added chocolate chips in which case giver. )

    Cool. It’s such a coincidence . . . I was going to make banana muffins tonight! And now I will do so with less calories :)
